Savory Muffins |Vegetable Muffins |Breakfast Muffins
Breakfast is one the most important meals of the day and essential part of the diet especially when you are looking forward to boost your metabolism and losing weight. However due to busy schedules and early morning rush this is the most common meal missed by many people.
Today I am going to share one such delicious and healthy breakfast recipe “Eggless Breakfast Savoury Muffins” that you can make quickly without much hassle in early morning. The best part about baking is once you are done with making the batter or mixture you just have to pour and bake it without requiring any one’s constant presence in the kitchen. For this recipe, if you do some preparations in advance, all you have to do is mix and bake.

These savoury muffins are not only tasty but healthy also as we are using lots of vegetables, corn and cheese. Flour also you can have of your own choice . You can enjoy these muffins without any guilt as we are using wheat flour in this. If you like you can have 1/2 cup whole wheat flour and 1/2 cup gram flour or instead you can have 1 cup whole wheat flour also. Fat is also we are using refined oil that too in a very less quantity . Vegetables also you can use of your own choice. I am using Bell Peppers, Corn, spinach and feta cheese. You can add onion, peas, tomatoes which are easily available to you.

Savoury Vegetable Muffins
Ingredients
- 1 Cup Flour
- 1/4 tsp Baking Soda
- 1/2 tsp Baking Powder
- 1/2 tsp Black Pepper
- 1/2 tsp Roasted Cumin Powder
- 1 tbsp Green Capsicum, chopped
- 1 tbsp Yellow Capsicum, chopped
- 1 tbsp Red Capsicum, chopped
- 1 tbsp Corn
- 1 Cup Spinach Leaves, chopped
- 1/2 Cup Feta Cheese
- 3 tsp Refined Oil
- 3/4 Cup Curd
Instructions
- In a mixing bowl add all the dry ingredients Flour, Baking Soda, Baking Powder, Salt & Pepper.
- Now add all the chopped vegetabls Capsicums, Corn, Spinach, Feta Cheese and Mix Well.
- Add Refined Oil and Curd into the mixture and mix well.
- If the batter is too thick add the water to adjust the consistency.
- Pour the prepared mixture into the muffins moulds. fill 3/4th only.
- Garnish with chopped vegetables.
Bake in preheated oven at 180 degrees for 30 minutes.

- Vegetables You Can have of your choice.
- Prepare the vegetables in advance just mix them and bake. Will save your time if you are in hurry.
- Kids will love them in there tiffins also
