Give this absolutely delicious Hasselback Potatoes a try. It is crispy on the outside and tender on the inside make it absolutely delicious for parties along with a yogurt dip.

These crispy, crunchy, buttery potatoes with their accordion-like appearance take only a little more effort than a baked potato and are a knockout when served alongside a special dinner.

HERE’S WHAT YOU NEED TO MAKE HASSELBACK POTATOES

  • Butter or Olive oil
  • Garlic
  • Mixed Herbs
  • Salt and Pepper

HOW TO CUT HASSELBACK POTATOES

Here’s how it works: Slice the potatoes thinly, accordion style, but stop short of cutting all the way through so the slices remain attached at the bottom. Leave them unpeeled!

Here’s a trick! To help guide your slices, place a chopsticks on either side of the potato while you cut — this will help to keep you from accidentally slicing through.

HOW TO SEASON HASSELBACK POTATOES

I have dressed these potatoes simply with salt, pepper, melted butter, olive oil and mixed herbs. Herbs such as thyme or rosemary in combination with the parsley would do nicely here, as would using all butter or all olive oil. You also could gussy up your potatoes with garlic, breadcrumbs, chopped nuts, Parmesan or other cheese.

Here’s a trick! Half way through cooking, brush the herb-infused oil over the surface of the potatoes, making sure it seeps down into the layers, and continue roasting in the oven until crispy.

That second application of fat is key. When you first cut the potatoes, the slices are too tight for the butter to get down in the cracks. But about halfway through cooking, the potatoes start to fan out. This gives you some space to coax some butter down into the nooks and crannies, plus the second coating ensures crispy perfection.

Crispy Herbed Hasselback Potatoes Recipe

Crispy Hasselback Potatoes with Herbs and Garlic – A simple hasselback potato recipe with crispy skin, soft interior folds, and tons of herb flavor!

Ingredients

  • 6 Potatoes
  • 2 tbsp Butter
  • 2 tbsp Olive Oil
  • 1 tbsp Garlic minced
  • 1 tsp Mixed Herbs
  • Salt to taste
  • Black Pepper to taste

Instructions

  • Preheat the oven to 400°F/200°C.
  • Wash and pat dry the potatoes.
  • Hold the end of one potato. Use a sharp knife to cut across the potato to create 1/16- to 1/8-inch sections. Do not cut through the potato, but cut two-thirds the way down, leaving at least a 1/2 inch solid base at the bottom. Repeat with the remaining potatoes.
  • Make the marinade together in a small bowl by mixing the Salt, Butter, Garlic, Olive oil, Herbs and Pepper.
  • Place the potatoes in an oven- safe dish and brush them with the marinade, making sure to get the marinade into the cuts to maximize flavor. Bake for 20 minutes uncovered.
  • Remove the pan from the oven and brush the potatoes again with the remaining fat — you can nudge the layers apart if they're still sticking together. Make sure some of the fat drips down into the space between the slices.
  • Now bake for another 20 minutes covered with foil, and then uncovered for as long as it takes for the potatoes to be golden brown. Bake until the potatoes are crispy on the edges and easily pierced in the middles with a paring knife
  • Serve immediately. These potatoes are best straight from the oven while the edges are at their crispiest.

Notes

  • You can also add cheese and bake.
  • Any type of potatoes can work fine for the recipe. 
  • If you want to make these potatoes ahead of time, you can half bake them up to a day before. When serving, give them a quick mix and let them finish baking.
