Nothing like a good plate of aromatic biryani! This kabab Biryani hits all the right spots with its wonderful aroma and exotic flavors!

A fragrant and slightly different from the usual kind of biryani, perfect for very special occasions or when you are in the mood to try out something uniquely different from your normal biryani . This beautiful meal is one that is bursting with flavour and is made up of harmonious layers of perfectly cooked aromatic rice and spicy rich Lotus Stem Kabab.

What is Biryani

Biryani is a rice dish made with layers of rice, spices and traditionally meat (but it our case kababs with gravy!).

Here are the key components of biryani:

  • Rice: of course rice is the base and key ingredient of this dish. Long grain basmati rice is what is traditionally used. I highly recommend using extra-long grain aged basmati rice for biryani.
  • Kababs: so traditionally meat is used in biryani but since we are making vegetarian version so we are using Lotus stem kababs. You can use any veggies also for this.
  • Spices: aromatic and exotic spices  (both whole and ground) are a must for a good biryani. Most commonly used are cardamom , cumin, saffron, garam masala.
  • Also rose water or kewra water is often used to flavor the biryani.
  • Fresh herbs & nuts: herbs like mint, cilantro and nuts like cashews are often added as garnishing and to add more texture and flavors to the biryani.
  • Caramelized onions also make a great addition.
  • The kababs and rice are layered and the biryani is then cooked on low heat with some heavy object placed on top of the pot of biryani.
  • This process is called “dum” and hence it’s also known as Dum Biryani.

How To Make Biryani

Pick and rinse 1.5 cups (300 grams) basmati rice in running water till the water runs clear of starch. Soak the rice in water for 30 minutes. After 30 minutes drain the rice and keep aside. When the rice is soaking prep the other ingredients. 

Preparing and Cooking Kababs :

Chop the lotus stem and boil it till it gets soft. Cool and grind to a paste. Add all the other ingredients. Shape them in kababs and keep them in refrigerator for some time. Then shallow fry them and keep aside.

Cooking rice for biryani

  • Now we need to cook the rice. For cooking rice, you can use any method – microwave, pressure cooking or cooking in a pot. For cooking rice in a pot, take a deep bottomed pan. Add 5 cups water and heat the water on a high flame.
  • When the water becomes hot, add all the spices , salt  and oil.
  • Bring the water to a boil on a high flame. Then add the rice.
  • Just gently stir with a spoon or fork, after you add the rice. Check the taste of water and it should taste slightly salty. If the water is not tasting slightly salty, then add some more salt.
  • The rice has to be 75% or ¾ᵗʰ cooked. The grains should have a slight bite to them when cooked. The rice should not be fully cooked but almost cooked.
  • Drain the rice in a colander.

Cooking gravy for kabab biryani

  • In a pressure cooker or a pan, heat 3 tbsp ghee. Add the following spices – 1 tsp jeera, 1 tej patta, 3 green cardamoms, 3 cloves, 1 black cardamom, 1 inch cinnamon. Saute.
  • Now add the onions. Stir and sauté them on a low to medium flame. Then add the ginger-garlic paste and sliced green chillies. You can also finely chop the ginger-garlic and add.
  • Add freshly pureed tomato and cook. Add all the spices followed by curd and cream.
  • Then add ½ cup water if required. Once the gravy is ready add the fried kababs so that gravy is well coated on them and take them out .

Layering kabab Biryani :

  • Now in a thick bottomed pan, layer half of the gravy first.
  • Then layer half of the rice. Sprinkle half of the chopped coriander, mint leaves , fried onion saffron milk.
  • Add kababs and the remaining gravy.
  • Layer the remainder of the rice. Sprinkle the remaining coriander, mint leaves, fried onion , remaing kababs and saffron milk on the top.
  • Sprinkle 2 tsp of rose water or kewra water.

How to Dum cooked Biryani :

  • Seal and secure the pot with aluminium foil. Then cover the pan/pot with a tight fitting lid.
  • Keep the flame to the lowest and cook veg biryani for 25-30 minutes. You can also dum cook veg biryani for the first 15 minutes on direct low flame and then for the last 10 minutes, place the handi on the hot tava and cook on a low flame.

Ingredients

For Boiling rice

  • 1 Javitri ( Mace )
  • 3 Cloves
  • 1 inch Cinnamon
  • 1 Black Cardamom
  • 4 Green Cardamom
  • 1 Star Aniese
  • 1 Bay Leaf
  • 2 tbsp Oil
  • 1.5 Cups Rice
  • 1/2 tsp Salt

For Bhein Ke Kabab ( Lotus stem kabab )

  • 1 Lotus Stem
  • 2 medium Potatoes boiled and mashed
  • 1 tsp Sesame Seeds
  • 2 tbsp Rice Flour
  • 1/2 tsp Garam Masala Powder
  • 1/2 tsp Coriander Powder
  • 1/2 tsp Red Chilli Powder
  • 2 tbsp Gram Flour roasted
  • 1/2 tsp Chaat Masala

For Gravy:

  • 2 Onions grinded
  • 2 Tomatoes Pureed
  • 1/2 tsp Ginger Garlic Paste
  • 1/2 Cup Curd beaten
  • 1/4 Cup Cream
  • 1/4 tsp Turmeric Powder
  • 1/4 tsp Garam Masala Powder
  • 1/2 tsp Coriander Powder
  • 1/2 tsp Red Chilli Powder
  • 1 Bay Leaf
  • 1 Black Cardamom
  • 2 Green Cardamom
  • 1/2 inch Cinnamom
  • 4 Cloves
  • 1/2 tsp cumin Seeds

For Layering:

  • fresh mint leaves
  • fresh Coriander leaves
  • Saffron Soaked in water or milk
  • little Rose Water

Instructions

  • Soak Rice in Water for 30 minutes.
  • Peel and cut Lotus Stem in small pieces.
  • Boil in hot water till soft. Cool and grind.
  • Dry Roast Sesame seeds.
  • Add all the ingredients of Kabab lotus Stem paste, boiles potatoes, sesame seeds, salt, coriander powder, garam masala powder, chaat masala, roasted gram flour , soaked kesar water and mix well .
  • Shape into the kababs and roll them in rice flour. Refrigerate for 30 minutes.
  • Boil water add salt, bay leaf, black cardamom , kachri, green cardamom, cloves, cinnamon , Star Aniese and oil.
  • Add Soaked and Drained Rice. Cook on high flame till 3/4th cooked.
  • Drain and keep aside. Drizzle 1 tbsp of Desi Ghee to give extra flavour.
  • Heat Oil in a pan and fry refrigeratd kababs.
  • Now for gravy: Take oil in a pan add Cumin seeds, bayleaf, cloves, Cinnamon, Cardamom and saute.
  • Add onion paste and cook till golden brown.
  • Add ginger garlic paste and cook till the raw smell disappears. Add tomato puree and cook.
  • Now add all the spices salt, turmeric powder, coriander powder, red chilli powder and garam masala powder. Add curd and cook till the mixture leaves the sides.
  • Add cream and adjust the consistency by adding water. Add fried kababs so that they are well coated in gravy. Remove and keep aside.

Layering the Biryani :

  • Now in a thick bottomed pan, layer half of the gravy first. Then layer half of the rice.
  • Sprinkle half of the chopped coriander, mint leaves , fried onion saffron milk.Add kababs and the remaining gravy.
  • Layer the remainder of the rice. Sprinkle the remaining coriander, mint leaves, fried onion , remaing kababs and saffron milk on the top. Sprinkle 2 tsp of rose water or kewra water.
