The only thing that could make a weekend better is sitting down with a pan full of this Easy Strawberry Cheesecake! It’s got all the things I love – a good thick crust, super creamy vanilla cheesecake and it’s covered in strawberry sauce and strawberries. No joke, I could demolish this thing. Just pass me the pan and a fork!
There’s really nothing fancy with today’s recipe. It’s simple, light, and fresh. You’ll probably be able to enjoy more than one slice without feeling bogged down and heavy.
And with strawberries coming into season soon, I can think of no better way to highlight this bright red, juicy fruit.
No-Bake Strawberry Cheesecake Recipe:
You don’t even need to turn on the oven for this no bake cheesecake. It’s such a simple dessert recipe that I made the whole thing from start to finish in my Food Processor in just under 20 minutes. Plus, it doesn’t contain eggs. This Strawberry Cheesecake becomes firm by whipping together the cream cheese and cream, then letting it firm up and set over night.
HOW TO MAKE THE BEST STRAWBERRY CHEESECAKE
So to put the cheesecake together, we start with the cracker crust. A total classic! I like to add a touch of brown sugar to sweeten things up because I’m me and I like things sweet and little bit of nutella and cocoa powder. No surprise there. Plus, it really does make the crust just that much better.
Next you’ve got the cheesecake filling. Pretty straight forward, just try not to over mix things too much. Just beat cream cheese with sugar and add heavy beaten cream to it with strawberry sauce . Just so simple !
The topping is the most delicious homemade strawberry sauce with fresh chopped strawberries! It’s not super thick like Jello, it’s more like a sauce. It’s baked right on the stove and the longer it cools after cooking, the more it thickens up.

Ingredients
For Crust
- 15 Digestive Biscuits
- 5 tbsp Melted Butter
- 2.5 tbsp Nutella
- 2.5 tbsp Brown Sugar
- 2.5 tbsp Cocoa Powder
For Strawberry Topping :
- 700 grams Fresh Strawberries
- 70 grams Sugar
- 1.5 tsp Vanilla Extract
- 4 tsp Agar Agar
CheeseCake Filling :
- 700 grams Cream Cheese
- 3/4th Cup Powdered Sugar
- 1.5 tsp Vanilla Extract
- 3/4th Cup Heavy Cream
Instructions
Crust
- Grind the Biscuits to a fine powder.
- Add melted butter, nutella, brown sugar and cocoa powder. Mix Well.
- Press the mixture evenly into the bottom of the spring form pan.
- Keep it in refrigerator for 30 minutes.
Strawberry Topping:
- Mix Agar Agar with 2 tbsp of water and keep aside.
- In a pan combine strawberries, sugar and little water.
- Cook till the strawberries are soft . Puree.
- Add vanilla extract and slowly slowly add dissolved Agar Agar .
- Gently Cook over low heat till Agar Agar is completely dissolved.
CheeseCream Filling :
- In a bowl beat the chilled heavy cream till soft peaks.
- Beat Cream Cheese and Sugar. Add 1/2 Cup Strawberry Sauce. Mix Well.
- Fold the whipped cream into the cheese cake batter until just combined.
- Pour the batter into the pan. Refrigerate , uncovered until set at lest for 4 hours.
- Pour the reserved strawberry topping over the cheesecake.
- Place the cheesecake in refrigerator until the topping is set.
- Top with fresh berries.
- Yummy Strawberry cheesecake is ready to serve.
