Easy & quick recipe to make perfect kaju katli like the ones we get in sweet shops .Kaju Katli is an Indian dessert or mithai and is made using kaju or cashews to give them that rich taste. This is a kind of dessert recipe that signifies special occasions and are usually served during Rakshabandhan, Diwali or Holi.
These Kaju Katli are the way they are actually ment to be – thin, smooth, melt in mouth slices of Cashew goodness. Ideally kaju Katli should be thin and not thick like Barfi. The word Katli means ‘ thin slices ‘.
Kaju Katli is my Son’s favourite sweet . He can finish lots of Katlis in no time. Sometime even i have to hide this sweet from him so that other members of the family can also have. Kaju Katli is made by mainly two ingredients Cashew Nuts & Sugar. But to increase the taste we can also add milk powder in this.
Some important tips and suggestions for a perfect kajukatli recipe
- Make sure cashews are powdered as fine as possible without making the powder lumpy. Pulse the cashews in intervals and avoid running the blender for long time.
- Over blending will make the cashews to release oil from cashews. This will not give the right texture to the kaju katli.
- Do not over cook the mixture as it dries out the kaju katli.
- Kneading the mixture well is the key to get smooth and melt in mouth melting Kaju Katli.
Kaju Katli | Halwai Style Kaju Katli | काजू कतली रेसिपी
Ingredients
- 250 grams Cashew / Kaju
- 1/4 Cup Milk Powder
- 3/4 Cup Sugar
- 1/4 Cup Water
- 1 tsp Desi Ghee
Instructions
- Powder the cashew in a coffee grinder or a dry grinder.
- The cashews should be in powdered form and not become pasty or oily.
- Sieve the ground cashew powder. Add milk powder and keep aside.
- Now in a non stick pan, take sugar along with water.
- Keep the flame on low and keep on stirring to form syrup.
- Stir the sugar syrup till it forms 1 string consistency. Turn off the flame.
- Add the cashew mixture and keep on stirring.
- The Cashew mixture will start thickening.
- Mixture should be soft and smooth.
- Take out the mixture on a plastic sheet and make it soft by kneading.
- Take a lump of the mixture and flatten it.
- Then roll the dough with a rolling-pin, adjusting the thickness according to your choice.
- Cut the edges so that you can get perfect diamond shapes.
- Now cut the dough into diamond shape or the shape you wish for.
- You can also decorate with silver leaf / silver vark.
- Finally, serve kaju katli to your brother and celebrate raksha bandhan.

- Removed the dough little early from the pan and now it sticky and loose?
Add little milk powder, mix and knead till smooth. - Cooked little longer and now dough is little hard and dry?
Add couple of teaspoons of milk and knead till smooth and soft.
