This salad is perfect for summer produce season: bites of ripe tomatoes, cucumbers, and red onions drizzled with herbs and olive oil, and topped with olives and some Feta Cheese. Get the tomatoes and cucumbers in-season while you can (and while they’re cheap), and try them with this recipe as a nice break from the standard bowl of leafy greens.

This is an easy and delicious recipe for a traditional Greek salad. Growing up, when I ordered Greek salad in a restaurant, this is how it came. I’m not sure when lettuce got introduced into the mix my guess is that it’s used as filler to cut costs, but in my opinion it has no business being on my plate when all I want is the vine ripened tomatoes, crispy cucumbers, bell peppers, olives, onion, and salty feta cheese.

First we will prepare the dressing by mixing Olive Oil, Vinegar, Sugar, Garlic , Salt and Pepper. Whisk everything together and keep it aside. For best results we will pour the dressing at least 1/2 hour before serving. You can keep the rest of the dressing in refrigerator for later use.

Ingredients

  • 2 Tomatoes
  • 1 Cucumber
  • 2 Onions
  • 1 Green Capsicum
  • 1/2 Yellow Capsicum
  • 1/2 Red Capsicum
  • 10 Black Olives
  • handful of Fresh Coriander Leaves
  • few Spinach Leaves
  • 150 grams Feta Cheese
  • 1/2 Lemon

For Dressing

  • 3 tbsp Olive Oil
  • 1 tbsp Vinegar
  • 1 tsp Sugar
  • 2 Clove Garlic, Minced
  • 1/4 tsp Salt
  • 1/2 tsp Freshly Ground Black Pepper

Instructions

Dressing

  • Combine Olive Oil, Vinegar, Sugar, Garlic, Salt & Pepper.
  • Whisk together until combined.

Salad

  • Cut tomatoes into six wedges Each, then cut each wedge into halves.
  • Cut Cucumber into two halves and then into small chunks.
  • Cut Onions into thin slices and then separate each slice.
  • Cut all the capsicums into equal shapes.
  • Cut Olives into lengthwise.
  • Cut Feta Cheese into small cubes.
  • Combine all the vegetables , olive, Feta Cheese , Baby Spinach leaves and Coriander leaves into a bowl.
  • Pour Dressing over the salad. Toss together everything .
  • Just before serving, top with additional feta and squeeze lemon juice over the top

Notes

  • Always Pour dressing over the salad at least half an hour before serving for better taste.
  • For the authentic taste use Red Wine Vinegar for best results.
  • Usually Capsicums are also not used in classic version of Greek salad. But i have added to increase the taste and color of the salad.
