Dhaniya Panjiri

Ingredients

  • 1 Cup Coriander Powder/ Dhaniya Powder
  • 1/2 Cup Powdered Sugar
  • 1/4 Cup Makhana / Fox Nuts
  • 1/4 Cup Cashew Nuts
  • 1 tbsp Raisins
  • 1/2 tsp Green Cardamon Powder
  • 1/2 Cup Coconut grated
  • 2 tbsp Desi Ghee
  • Nuts of your choice optional

Instructions

  • Heat 1 tablespoon ghee in a pan and toast phool makhane and all the nuts until light brown. Keep stirring until the nuts are toasted. Remove and set it aside.
  • In the same pan add the remaining ghee and add coriander powder.
  • Cook the coriander powder on a medium-low flame until it starts emitting its aroma.
  • Once done, take it off the flame. Let it cool completely.
  • Add roasted nuts, Raisins, Green Cardamom powder, Grated Coconut and Powdered Sugar.
  • Adjust Sugar according to your taste. Mix Well.
  • Panjiri is ready to serve.

Notes

  • Coriander powder may leave a slight bitter taste to this panjiri. feel free to add 1/2 cup of crumbled mawa to the panjiri but that is again optional. Traditional recipe doesn’t call for mawa, it’s made without mawa. If you choose to add mawa, adjust sugar 
  • You can use the nuts according to your taste.
