Lost Recipes - Chakki ka Saag | Jodhpuri Chakki Ki Sabji

Rajasthani chakki ki sabzi is popular Rajasthani gravy curry. Chakki is made of wheat flour-atta dough, after wash dough cut into medium size pieces steamed or boiled and deep fry them in oil. This is a unique dish, mainly prepared in Jodhpur. You can serve with roti or rice.

Ingredients

For Chakki Dough:

  • 800 grams Wheat Flour
  • 1/2 tsp Salt

For Chakki Ki Gravy:

  • 5 tbsp Desi Ghee
  • 2 Medium Onions
  • 1/4 tsp Hing ( Asafoetida )
  • 1 tsp Ginger Garlic Paste
  • 1/4 tsp Turmeric Powder
  • 2 tsp Red Chilli Powder
  • 1/2 tsp Kasoori Methi
  • 1 tsp Coriander Powder
  • 1/2 tsp Garam Masala Powder
  • 10 Cashew Nuts
  • 1/2 tsp Dry Coconut Powder
  • 1 tsp Cumin seeds
  • 2 tsp Melon Seeds
  • 1/2 inch Ginger
  • 1 Bay Leaf
  • 2 Green Chilies
  • 3 Cloves
  • 1 Star Aniese
  • 1 Green Cardamom
  • 1.5 Cups Curd Beaten
  • Salt to taste

Instructions

  • Take a wheat flour and add salt.
  • Prepare a soft dough like chappati dough.
  • Cover and keep aside for 15 minutes.
  • Soak the dough in water. Keep washing till all the loose dough gets washed off.
  • Rest in between the washing and keep changing the water.
  • Take out the dough on a seive. Wash the dough under a gentle stream of water, placing a conical strainer below. Use your fingers to rub and wash away the flour, so that only the gluten remains.
  • Collect this gluten dough to make chakki. Keep it on seive for some time.
  • Make a small balls from it. Boil these in hot boiling . You can also steam the chakkis if you want.
  • Take them out and let them dry for sometime.
  • Take 2 tbsp Ghee in a pan and shallow fry the chakkies. Keep aside.
  • Heat Ghee in a pan add Onion, Green Chilies, Ginger, Garlic Paste, Cashew Nuts and Melon Seeds.
  • Cook till the onions are soft.
  • Take out in bowl add dries coconut. Grind to a fine paste.
  • Take Ghee in a pan add Cumin Seeds, Asafoetida ( Hing ), Star Aniese, Cloves, Green Cardamom and Bay Leaf . Saute for a minute.
  • Add the grinded mixture and cook till the ghee leaves the sides.
  • Add Coriander Powder, Garam Masala Powder, Red Chillli Powder, Turmeric Powder and Salt.
  • Add Beaten Curd cook while stirring continuously . Cook till the mixture leaves the sides.
  • Add little water and adjust the consistency. Add the chakkies.
  • Cook for another 4 minutes. Add some fresh coriander leaves and sprinkle some Garam Masala Powder.
  • Add crushed Kasoori Methi.
  • Yummy Jodhpuri Chakki Ka Saag is ready to serve.
