Holiday Fruit Cake - Christmas time

Fabulous holiday fruitcake! With dates, raisins, walnuts, glazed cherries, and orange zest. Perfect for Christmas celebrations.

Ingredients

  • 3 Cups All Purpose Flour
  • 1.5 tsp Baking Powder
  • 1.5 Cups White Sugar
  • 3/4 th Cup Brown Sugar
  • 200 grams Butter at room temperature
  • 1 tbsp Vanilla Extract
  • 5 Eggs
  • 1 Cup Mixed Nuts and Berries
  • 1 Cup Soaked Fruits
  • 1 Cup Walnuts

Instructions

  • Seive all the dry ingredients Flour and Baking Powder.
  • Beat Butter with beater till smooth and creamy.
  • Add white and Brown Sugar and beat again till the mixture is smooth and creamy.
  • Add eggs one at a time and beat well.
  • Add vanilla essence and mix well.
  • Gradually add flour . Mix well.
  • Add soaked fruits, walnuts and mixed nuts.
  • Pour the mixture into the prepared tin. Sprinkle some dry fruits and berries.
  • Bake in preheated oven at 180 degrees for 60 minutes Or till the tester comes out clean.
  • Cool completely before taking out of the tin.
  • Allow cakes to completely cool before slicing.
