Tropical Coconut Pineapple Rice
Ingredients:
- 1 Pineapple
- 1 Cup Basmati Rice
- 2 Cups Coconut Milk
- 1 tsp Oil
- 8-9 Cashew Nuts
- 1' Cinnamon Stick
- 1 Bay Leaf
- 4 Cloves
- 1 tsp Ginger Garlic Paste
- 1 tsp Red Thai Curry Paste
- 2 Green Chillies, chopped
- Salt to Taste
- Black Pepper to taste
- Lemon Juice
- Coriander and Mint Leaves to garnish
Instructions:
- Cut the pineapple into small pieces.
- Wash and soak rice for 30 minutes.
- Add a tsp hillies.oil/butter in a pan and fry the cashew nuts and keed aside.
- Add Cinnamon, Bay Leaf, Cloves, Cumin Seeds, Chopped Green Chillies. Saute for a minute.
- Add Ginger Garlic paste and Saute for a minute.
- Add 2 Cups of Coconut Milk. Bring to boil.
- Add S=soaked and drained rice, chopped 1/2 cup pineapple pieces, Red thai curry paste and salt to taste. Mix Well.
- Cover and cook till rice is tender on low flame.Lightly fluff .
- Sprinkle Black Pepper to taste. Add lemon juice.
- Garnish with some cashew nuts, pineapple pieces, coriander and mint leaves.
- Serve hot with Curd or Thai Curry.
